Badanekayi Gojju Recipe | Brinjal Recipes. Healthy, tasty and spicy badanekayi gojju recipe which is an ideal side dish for rice. Blend of sour and spice with tadka of garlic, ginger and hing. Badanekayi Gojju is an authentic side dish recipe from south canara.

Badanekayi Gojju

 4 Brinjal
 2 Green chilli chopped
 2 Onion chopped
 1 tbsp Jaggery
 2 tbsp Tamarind pulp
 2 tsp Oil
For tempering:
 2 tbsp Oil
 ½ tsp Mustard seeds
 ½ tbsp Urad dal
 1 Dried red chilli
 1 tbsp Ginger chopped
 1 tbsp Garlic chopped
 A pinch asafoetida
 Few coriander leaves chopped

Wash and chop the brinjal into big pieces, immerse them in a bowl of water, so that they don't oxidize. Keep aside.

Heat oil in a kadai, add 2 chopped onion, 2 chopped green chilli and fry for a min.

Then add brinjal, 1 tbsp jaggery, 2 tbsp tamarind pulp and salt to taste, mix well.

Cook for 5-10 minutes.

Now prepare tempering, take a kadai heat 1 ½ tbsp oil and add ½ tsp mustard seeds, ½ tbsp urad dal, 1 dried red chili, 1 tbsp chopped ginger, 1 tbsp chopped garlic and a pinch asafoetida, fry for a min.

Then add cooked brinjal and mix well.

Garnish with coriander leaves. Badanekayi gojju recipe ready to serve.
