Grind 1 cup coriander leaves, 1 tbsp ginger garlic paste and 2 green chilies with little water.

Take a kadai heat 2 tbsp ghee and sauté 1 tsp cumin seeds, few chopped cashews then add 1 chopped onion and 1 chopped tomato sauté well until onions change color slightly. Add ¼ tsp turmeric powder, 1 tsp kasuri methi and 1 cup mixed vegetables and fry for 2 min.

Add grinded coriander paste, 2 cups of water salt to taste and 1 cup basmati rice (soak basmati rice for 20 minutes) mix well.

Cover and simmer for 20 minutes or until rice gets cooked completely.

Serve hot green veg pulao with raita.
