Ingredients

Wash and chop the brinjal into big pieces, immerse them in a bowl of water, so that they don't oxidize. Keep aside.
Heat oil in a kadai, add 2 chopped onion, 2 chopped green chilli and fry for a min.
Then add brinjal, 1 tbsp jaggery, 2 tbsp tamarind pulp and salt to taste, mix well.
Cook for 5-10 minutes.
Now prepare tempering, take a kadai heat 1 ½ tbsp oil and add ½ tsp mustard seeds, ½ tbsp urad dal, 1 dried red chili, 1 tbsp chopped ginger, 1 tbsp chopped garlic and a pinch asafoetida, fry for a min.
Then add cooked brinjal and mix well.
Garnish with coriander leaves. Badanekayi gojju recipe ready to serve.
